Not all kettles are made equal.

At first I thought I could get away with a regular spout kettle. Until I made my favourite brews of coffee and matcha, I realised that I missed the flow control of gooseneck kettles. I also had a cast iron stovetop tea kettle with a better spout, but I wanted more control.
